Raw Vegan Chocolate Figgy Pie with Pecans

I have been craving something chocolaty lately, so I decided to experiment with the ingredients in my fridge and pantry.  I love doing that!  So, I soaked some nuts the night before and made a delicious and healthy dessert that is packed with nutritious ingredients the next day.  It was so easy to make that my daughter (4 years old) was able to help me make it.  After my daughter tried it, she says, “Mommy, this is the best pie I have ever tasted!  I love you so much!”  LOL  It was too cute.

Ingredients for crust:

  • 1 and 2/3 cup of raw pecans (if you don’t have “raw”, just use unsalted pecans)
  • 1 cup of pitted medjool dates
  • 12 dried figs (stems removed)
  • 2 tablespoons of cold pressed coconut oil
  • 1 teaspoon of vanilla
  • 2 tablespoons of raw cacao (note: if you don’t have “raw”, you can use regular cacao powder)
  • pinch of sea salt
  • 1 tablespoon of shredded coconut to sprinkle on the pan

Here are the figs I used:

Ingredients for the Filling:

  • 2 cups of raw cashews (soaked over night in filtered water)
  • 1 and 1/3 cup of filtered water
  • 4 tablespoons of cold pressed coconut oil
  • 4 tablespoons of raw agave (I don’t like my desserts too sweet, so taste it to see if it is sweet enough for you, if not, add a little more agave)
  • 1 tablespoon of vanilla
  • 2 tablespoons of raw cacao powder
  • 2 dried figs (stems removed)
  • 1/2 teaspoon of soy lecithin granules

Directions for Crust:

  1. Throw all ingredients in the food processor (except for the shredded coconut) and blend for a few minutes.
  2. Sprinkle shredded coconut on the bottom of your pie pan.  This is so the crust doesn’t stick to the pan.
  3. Press the crust blend onto your pie pan.

Directions for Filling:

  1. Throw all “filling” ingredients into your blender.  I used my Vitamix.
  2. Blend for a few minutes until it is smooth.
  3. Pour blend onto pie crust.
  4. Decorate with more pecans.
  5. Freeze for a few hours.
  6. Serve.

Super Fruit Salad

Okay, this has all kinds of awesome nutrients for your body.  It is also very delicious and tasty.  Savannah and I ate a huge bowl of this today…..mmmmmmm :)

First you need to start off with some “super fruits” such as kiwi, figs, etc.  Then add some other awesome fruits of your choice (apples, bananas, pears, etc.)

Second, you need to make the sweet fruit salad “dressing”.

Directions: Take 1/4 cup of raw macadamia nuts (soaked overnight), and put it in a Vitamix or any other blender/processor, add 1/2 cup of water, 3 pitted medjool dates, 1 tablespoon of coconut oil, 1 tablespoon of raw agave, and a few pinches of cinnamon.  Blend together until the texture is smooth and creamy.

Third, you drizzle the sauce onto the fruits.

Fourth, add some raw hemp seeds on top.

At last, enjoy!  Note: serve chilled!

Raw Vegan Fig and Pear “Pie”


It is very difficult to find figs out here.  So, you can imagine how happy I was to find these at the local farmer’s market!  I just about had a heart attack when I saw them!  I LOVE dried figs, but fresh figs are even better!

This dessert packs a lot of fiber, B6, manganese, potassium, calcium,iron, protein, omega 3s and more!  It tastes sinful, but it is super healthy!

Serves 4

Ingredients for Crust:

  • 6 medjool dates (pitted)
  • 1/4 cup of shredded coconut
  • 1 cup of raw cashews
  • 1/2 tsp almond extract
  • 1/2 tsp vanilla extract
  • 1.5 tablespoons of cacao nibs
  • 1 tsp of coconut oil

Ingredients for Filling:

  • 1/2 of a pear
  • 1 cup of fresh figs
  • 4 medjool dates (pitted)
  • 2 tablespoons of raw agave
  • 1 tablespoon of fresh lemon juice
  • 1.5 tablespoons of cold pressed coconut oil

Topping:

  • 1 to 2 tablespoons of hemp seeds

Directions:

  1. Process “crust” together and pack it in a small 5″ x 7″ glass container (refer to picture below)…press it down to make the first layer.
  2. Process the “filling” together and place it over the “crust”
  3. Top it off with hemp seeds.
  4. Place in the refrigerator for a few hours before serving.
  5. Serve and enjoy!

I love figs so much that I decided to buy fig trees!  And, in just a few months…..FIGS!  (look below).

These are 2 year old trees.

After I purchased these figs, we got motivated and planted our own herbs, fruits, and veggies in our back yard!  We planted tomatoes, persimmon, jalapenos, basil, thyme, mint, lemon balm, pumpkins, squash, cayenne pepper, bell pepper, okra, and eggplants!  And, it feels wonderful to use the harvest, from your own backyard, to add to the dishes you make!  You should try growing your own!

Green Fig Smoothie

This is the type of smoothie I make for my family EVERY day!  :)

….healthy, delicious, nutritious, and high energy!…b12, iron, calcium, vitamin c, vitamin a, omega 3s, and even protein!….and much more!

 Ingredients:

  • 1 banana
  • 1/2 cup of fresh figs
  • 1 cup fresh spinach
  • 5 brazil nuts
  • 2 tablespoons of flax oil
  • 3 baby carrots
  • 1 cup of chocolate almond milk
  • 1/2 a cup of pineapple
  • 1/2 of a small zucchini (this and the pineapple will help your body absorb the iron better)
  • 1 tsp spirulina powder
  • 3 tablespoons of raw wheat germ
  • ice
  • raw agave to sweeten (optional)

Directions:

Blend together and serve immediately! :)   Vitamix is my blender of choice.
