Hi there!

I would like to thank you for checking out my blog.  I started this blog for several reasons.  One,  so I can share the delicious VEGAN recipes with my family and friends.  Two, I can pass along information about health, shopping, food, etc. to those of you who want to know.  Three, I want people to see that eating healthy and “mindfully” is easy.  And,  that “compassionate living” is attainable.

When I say, “mindfully“, I am speaking of not contributing to cruelty to humans and non-humans.  It also means REDUCE your carbon footprint.  We need to leave behind a better world for our daughters, sons, grandchildren, etc.

What is a VEGAN, you ask?

  • Vegans do not consume any meat or animal products such as dairy, eggs, gelatin, etc.
  • Vegans do not wear animal products such as fur, leather, or feathers.
  • Vegans buy cruelty-free products.

Reasons why I am vegan:

1.  I am afraid of cancer and other diseases.

“Vegetables and fruits help to reduce risk, while meat, animal products, and other fatty foods are frequently found to increase risk of cancer. Consumption of dietary fat drives production of hormones, which, in turn, promotes growth of cancer cells in hormone-sensitive organs such as the breast and prostate. Meat is devoid of the protective effects of fiber, antioxidants, phytochemicals, and other helpful nutrients, and it contains high concentrations of saturated fat and potentially carcinogenic compounds, which may increase one’s risk of developing many different kinds of cancer.”-www.cancerproject.org

  • CASEIN, which is found in dairy, is a cancer growth promoter.
  • A Study by the AMERICAN JOURNAL OF CLINICAL NUTRITION suggests that high childhood total dairy intake was associated with a near-tripling in the odds of colorectal cancer.
  • Studies have shown that societies that consume more dairy products have higher rates of osteoporosis.
  • Studies have shown that type 2 diabetes may be reversed by a vegan diet.
  • Fish are laced with mercury, which damages your nervous system and kidney, it causes learning disabilities, and developmental problems in unborn babies.

2.  Because I HAVE MY DAUGHTER’S FUTURE TO THINK ABOUT!

  • I will do everything in my power to help her future be bright.   Going vegan is the only way we can have a bright future.  And, this is why:
  • Prediction: 2050, there will be 9.1 billion people on this planet.   The UN’s Food and Agriculture Organization said that food production would have to “increase globally to 70% by 2050 to feed the world’s surging population”.   How can this be possible?  Our resources today are already so scarce.
  • 800 to 2,500 gallons of water to produce a single pound of beef but 25 gallons to produce a pound of wheat.
  • Hundreds of thousands of acres of rainforest are destroyed every day for cows to graze and to grow crops for animal feed.
  • According to the Environmental Protection Agency (EPA), the runoff from factory farms pollutes our rivers and lakes more than all other industries combined.
  • A typical pig factory farm generates as much raw waste as a city of 50,000 people.
  • Insecticides and pesticides are sprayed on the billions of animals to keep bugs off of them.
    One gallon of gasoline in an internal-combustion engine releases about 19 pounds of carbon dioxide into the atmosphere. But clearing and burning enough rainforest to produce just one hamburger releases 165 pounds of carbon dioxide.

  • Acres of cropland spared: 180 million (an area larger than the state of Texas)
  • Tons of pesticides eliminated: 9,375
  • Tons of fertilizer eliminated: 2 million

3.  WORLD HUNGER:

  • According to worldhunger.org, there were 925 million hungry people in 2010.
  • Harvard nutritionist, Jean Mayer, estimates that reducing meat production by just 10 percent in the U.S. would free enough grain to feed 60 million people.
  • According to Bread for the World, almost 16,000 children die from hunger-related causes EVERY DAY!!!!
  • A cow will eat 16 pounds of grain to produce 1 pound of meat.
  •  Meat and dairy products, accounts for 70% of global freshwater consumption

Percentage of:

  • soybean crop grown to feed livestock: in the US: 90%
  • corn crop grown to feed livestock: in the US: 80%
  • all grains grown to feed livestock: in the US: 70%

4.  I am vegan for COMPASSION: 

  • In factory farms, animals are treated like machines, cramped/kept in small areas, dismembered without painkillers, and forced to live a very unnatural life living in their own excrement.
  • Every year we slaughter 10 billion land animals 18 billion marine animals.  98% of animals who are murdered are abused and killed by meat and dairy industry.
  • They are tortured, neglected, and abused.  But, the meat and dairy industry don’t want you to know that.  They want you to think that their cows are “HAPPY”.  Is that why they are banning the use of photography in their establishments?  They are passing laws that favor the factory farms, which criminalizes the act of photographing the abused animals and their living conditions.  WHAT ARE THEY HIDING?  AND, PEOPLE HAVE THE RIGHT TO KNOW what is going on!

5.  And, last, but not least, I am vegan because I LOVE FRUITS AND VEGGIES!

ALL of the recipes and shopping info I will be posting will be VEGAN.   In regards to eating VEGAN, I would like to address a few things and answer some frequently asked questions.

  • Where do you get your protein?

I get my protein from many sources such as legumes/nuts, and grains (example: lentils, black beans, chick peas, soy beans, quinoa, bread, peanuts, almonds, cashews…you get the idea).  You can also get protein from vegetables!  I actually eat more GOOD protein now than I did before when I was a meat eater.  Some people think that we need a ridiculous amount of protein to survive, but according to the Physicians Committee for Responsible Medicine (and other sources), too much protein may increase the risk of osteoporosis, cancer, heart disease, impaired kidney functions, and weight loss sabotage.

  • Where do you get your iron?

I get my iron from dark leafy greens such as broccoli, spinach, kale, etc.   I also get them from cereals, grains, beans, fruits (dates/raisins), vegetables, sea vegetables, and even some spices.  Note: Eat your iron rich foods with foods that are rich in vitamin c in order for your body to absorb it more efficiently.

  • Where do you get your B12?

You can get B vitamins from spirulina (blue green algae), B12 sublingual drops,  and nutritional yeast.  You can also get B6 and B12 from sprouts such as, alfalfa.  Rice and nut milks (hemp, almond, soy, hazelnut, etc.) are fortified with B12.

  • Where do you get your calcium?

I get them from fruits such as kiwi, mulberries, dates, figs, citrus, prunes, mulberries, etc. and vegetables such as spinach, broccoli, collards, etc.  I also get them from nut butters/nuts and non dairy “milks” (soy, hemp, hazelnut, rice, almond, etc).  I also get it from fortified grains.

  • Where do you get your Omega 3s?

Evening primrose oil, hemp seeds, hemp milk, hemp oil, flax oil, chia seeds, borage oil, canola oil, walnuts, pumpkin seeds, tofu, soybeans, and sunflower seeds.

  • Does your diet consist of mostly SALADS?

One of the reasons why I created this blog is to educate my loved ones, who would always accuse me of just eating “grass”, that we eat more than just salads or “grass”.  Yes, I do eat as much salad as I can.  But, we also eat a wide variety of foods. I find that the foods that I eat now are so much more filling and flavorful.   Changing my diet was the best thing I have ever done for myself and for our family.  The nutrition-packed-food we eat give us plenty of energy.  Give it a shot!  30 days….healthy VEGAN diet….and, see what it can do for you!  (this means healthy, unprocessed, dairy free, egg free, meat free, 6 to 9 servings of fruits and veggies a day, with no sodas/no sugary drinks, etc.)….but, no cheating!

Crunchy Tofu Nuggets

Crunchy Tofu Nuggets

Crunchy Tofu Nuggets – I wanted to use up the panko crumbs that I had left over from the hummus stuffed jalapeno poppers I made last month and I had a package of firm tofu in the fridge, so I decided to make a crunchy breaded tofu nuggets.

My daughter and I loved these!  You can dip the tofu in vegan honey mustard (1 tsp agave, 2 tablespoons of mustard, and 1 tablespoon of vegan mayo), bbq sauce, hot sauce, or even just ketchup.  It is simple and easy.

My daughter got a kick out of helping me make these.

Ingredients:

  • 1 package of of firm tofu (frozen, thawed, and pressed)
  • 1 cup of unsweetened non dairy milk
  • 3 tablespoons of vegetable bouillon
  • 3 tablespoons of mustard
  • 1 cup of panko bread crumbs (for vegan and whole wheat, use Ians)
  • 1 cup of whole wheat flour
  • salt and pepper (optional)

Directions:

  1. Preheat oven to 400 degrees.
  2. Take your firm tofu (frozen, thawed, and pressed…this is for better texture), and slice it into 1 inch cubes.
  3. Mix vegan “milk”, vegetable bouillon, and mustard together.
  4. Dip cubed tofu into the “milk” mixture.
  5. Roll it into whole wheat flour.
  6. Dip into the milk mixture again.
  7. Roll in panko crumbs.
  8. Place onto greased cookie sheet.
  9. Bake for 15 to 20 minutes
  10. Enjoy with your hot sauce, vegan ranch dressing, ketchup, mustard, etc.
