Super healthy, raw, vegan, tasty, and filling meal!
Ingredients:
- 1.5 cups of raw almonds (soaked for about an hour)
- 3 tablespoons of raw sesame seeds
- 2 cloves of garlic
- juice of 2 lemons
- 3 teaspoons of liquid aminos
- 1.5 tablespoons of fresh ground ginger
- 1/4 cup of water
- 5 un-toasted nori sheets
- grated carrots
- spinach
- alfalfa sprouts
Directions:
- Place almonds, sesame seeds, garlic, lemon juice, ginger, water and liquid aminos in a food processor.
- Process together for a few minutes until you have made a pate.
- Scoop a few tablespoons of the pate onto the nori sheet and spread it.
- Add carrots, spinach and sprouts and roll nori sheet.
- Slice “sushi” roll.
- Serve with liquid aminos or shoyu.
- Enjoy!



These are very similar to a “sushi” roll I made this AM. Nori sheets lined with baby spinach tossed with a small amount of seasoned rice vinegar (maybe 2 1/2 cups of spinach, 2 t vinegar). Used this to “line” ~4/5 of nori sheet, put down a line of wasabi sauce, 1/5 into spinach layer, added 3/8″ strip of drained Tofu, one Spring onion cut in half, avocado slices, carrot match sticks, and red pepper strip (lightly steamed the last two first), rolled-up the roll, sealed edge with small amount water. Served with sliced pickled ginger and soy sauce. Really excellent!
